    Food For Thought - Playoff Praying

    Ladies and Gentlemen I do not promise that this thread will make it through the season. Last year I was dedicating this thread to certain players on the Steelers and it seemed as if every player I picked out ended up on the IR last season .... and then the Message Board died - so again this thread (should it bring some bad Mojo) will cease and never return.

    However since we play the Cardinals tomorrow - seems fitting that we enjoy some Southwest Cuisine featuring of course a little Chicken to tie into tomorrows fight against the Cardinals.

    For those of you new to this thread/idea - each week I try to come up with a dish that goes perfect with the team we're playing against. Orginally this was developed to offer some alternatives to Pizza and Burgers that become tiresome as the season wears on.

    Arizona Cardinal Casserole

    1 chicken, cooked and cut in pieces (about 1lb)
    1 med. pkg. tortilla chips
    1/4 c. onion
    1/4 c. chopped green pepper
    Chili powder to taste (1 tsp.)
    Garlic powder to taste (1/2 tsp.)
    2 cans cream of chicken soup
    1 can cream of mushroom soup
    1 can Old El Paso tomatoes and green chilies (10 oz.)
    1 sm. pkg. Cheddar cheese

    In 9x13 pan place tortilla chips. Place meat over chips. Mix soups, can of tomatoes with green chilies, with chili powder, garlic, onion, and green peppers and pour over meat. Grate Cheddar cheese and sprinkle on top.

    Bake at 350 degree for 1 hour. Can be prepared ahead of time and refrigerate until ready to bake. Serves 6-8.

    ****Iron Shiek option - Make sure to have a healthy heaping of Sour Cream at the ready to top this dish off!

    Special Santonio Holmes - Super Bowl edition - the chef must eat the first chip while balancing two toes at the edge of the kitchen, before entering the next room.

        Awesome Lonbull! Thanks.

        I always enjoyed your thread but have just recently gotten into cooking and trying some different things. I think I'm going to make this tomorrow as I will have time on my hands prior to the game.

          I made a slight twist and threw some sour cream on it after plating it. Nice.

          I am the only one here and I foresee at least half the pan gone before the night is over.

              I have to admit there's a little superstition on my end as well, the first year I started doing this was 2005. It's funny because late Wednesday Night I all of sudden remembered there was Steeler football the following day!!!!! Needed to get my stuff together!

              Good to know that I'm giving some piece of mind out there somewhere!

                  So with the Washington Redskins on board my first thought turned to Potato Skins - although I have to say, making Potato Skins is a lot of work for an appetizer, and most of the time Potato Skins are better at a restaurant than the ones you make at home. So I needed something else. My first thought was to look up Washinton D.C.'s oldest establishment and the one I found was Old Ebbitt's Grill. They have a number of food items to select from but the one that caught my eye was the : "F" Street Sandwich.

                  For whatever reason the image that came to mind is that F Street is like a WR going across the middle against our defense with Troy, and Ryan Clark waiting. And should you catch the ball (and even if you don't Wes Welker) you're going to find yourself on F Street. As in " Oh F... why did I just catch this ball" --- or "You're about to get F...'d up once our secondary finds you...." I just like the sound of it - welcome to F Street!

                  Now I'm just guessing on how to put this sandwich together - because I've never had one, but hopefully this will go over well.

                  "F" Street Sandwich

                  Ingredients:

                  Deli Smoked Turkey
                  Coleslaw
                  Muenster Cheese
                  Crispy Fried Onions (canned like the ones you use for Green Bean Casserole for Christmas)
                  Sesame Seed Buns
                  Mango BBQ Sauce

                  Instructions:

                  I haven't made this yet so I may change my approach but here's what I plan on doing. I'm going to put the Smoked Turkey (a heaping pile, just enough for one sandwich), a small portion of the Fried Onions and two or three spoonfuls of Mango BBQ Sauce in a microwave safe dish and heat the Turkey, Onions and BBQ Sauce for about 20 seconds. At that point I'm going to mix / toss the Turkey, Onions and BBQ Sauce to redistribute the heat and also mix the flavors around a bit.

                  Next I'm going to place two slices of Muenster Cheese on the Turkey and BBQ Sauce and heat until the Cheese begins to melt (I'm guessing somewhere between 15 and 20 more seconds).

                  After that I'm going to place the heated Turkey, Onions, BBQ Sauce, and Cheese on the Sesame Seed Buns and top the sandwich off with a sizeable portion of ice cold Coleslaw.

                  In a perfect world this sandwich will offer a lot of different textures for a meal. You'll have the hot turkey and cheese below the cool flavors of Coleslaw. You'll have a tropical kick with the Mango BBQ Sauce, and you'll have the crunch of the Fried Onions. A side of Tater Tots or Potato Chips and this should be solid meal.

                  **** As a side note if you don't want to buy Mango BBQ Sauce - You could try as an option of buying some Hawaiian Bread (like King's Bread) and then just using regular BBQ Sauce that you have at home or that you are more likely to use again soon.

                  **** Chef's Special - As you watch the game the Chef (and only the Chef) can declare the Steeler who had the hardest hit on the opponent his F Street Winner - could be a third string rookie, it doesn't matter. The Chef can also decline to give anyone that honor -because he's the one who made the food.

                    Sounds like another quality recipe, L.B., but I really want to comment on the Welkerization picture. I've never seen it from that vantage point. It appears that Ty Carter is being blown backward by the sheer force of the shockwaves of that impact. Awesome.

                      In this week's FFT - I'm throwing down two recipes for the price of one....well actually Frank's Red Hot Sauce is throwing down two recipes for the price of one. The first recipe is the unique twist on Buffalo Wings / which is really a Buffalo Wing Sandwich.

                      The Key Ingredient is Franks Red Hot Wings (Buffalo Sauce) - if you don't find this sauce I believe a decent substitute would be the "sauce" they give the directions for on the Regular Franks Red Hot Sauce (which I believe just mixes in some butter).

                      The first recipe is dedicated to Mr. D. LeBeau - (hence the French Bread) - The Buffalo Bills were the last team he coached before returning to the Steelers - Hopefully he'll end his career with us - Congratulations Coach LeBeau on the Hall of Fame nomination - duely deserved. (FYI Sept 9th is the man's birthday).

                      Fire Zone Blitz Sandwich

                      INGREDIENTS

                      4 skinless, boneless chicken breast halves
                      1/2 (6 ounce) bottle Franks Red Hot Wings Sauce (Buffalo)
                      1 red onion, sliced in rings

                      4 slices Swiss Cheese
                      4 slices tomato
                      4 leaves lettuce
                      Ranch Dressing
                      4 thick slices French baguette, halved


                      DIRECTIONS:

                      Let Chicken Marinate in 6 oz of Red Hot Sauce for a few hours (I usually do it overnight).

                      Preheat oven to Broil.

                      Place chicken in a foil-lined broiling pan - and top with onion slices.

                      Broil for 12-15 minutes, or until chicken is no longer pink and juices run clear.

                      ***Optional - Spread Ranch Dressing on French Bread -- Dr. Calculus says forget the Ranch and instead use Blue Cheese Dressing.

                      Place each breast half on bottom half of sliced baguette; top with tomato, lettuce and top half of baguette to serve.


                      ***The Second Recipe is literally on the Back of Franks Red Hot Sauce (Buffalo) bottle.

                      Goal-line Defense Wings

                      Ingredients:

                      2 1/2 pound Chicken Wing Pieces
                      3/4 Cup Franks Red Hot Wings / Buffalo Sauce

                      Directions:

                      Bake Chicken Wings at 500 degrees for 20 minutes until fully cooked and crispy.

                      Toss Wings in Franks Hot Sauce and serve.

                          1/2 cup ranch salad dressing
                          1/2 cup any flavor FRANK'S® REDHOT® Sauce
                          1/2 cup or shredded mozzarella cheese
                          1/2 cup of cheddar cheese
                          BUY A Rotisserie Chicken at the grocery store..SHRED IT UP and PUT in 2 CUPS!!!!........or you can use Can Chicken but its not as good.


                          DIRECTIONS:

                            Sounds like a quality dip that would be quite appropriate for a game against Buffalo, Doog!

                            However, do you really use Doritos for dipping? I find that Doritos are good by themselves, but somewhat flimsy, particularly for a heavy dip like this. A heftier tortilla chip may work better than Doritos. That's my tiny contribution to a cooking thread since I am far from a chef myself (when I try to boil water, I will figure out a way to burn it )

                              And i have to agree with Ruthless, doritos for dipping is a wee strange....dip sounds good though.
