No other reason to do it now. We still need a quality tackle, so hopefully there is one being targeted. Probably another TE though.

How many more underperforming or injured players can we sign with that

Good bye David Johnson or Matt Spaeth. Hopefully the former!
Playing Fantasy Football does not qualify you to be the in the front office or on the coaching staff of the Pittsburgh Steelers. They are professionals and you are not!

You would be able to extend a player without restructuring another. an extension usually takes effect the following year, especially when you have a team that is tight against the cap.

Wouldn't a portion of any bonus accelerate into this year?

I don't think it is Sanders, more likely Moeaki or another OL...could it be Starks?

Clearing cap space for another trade?

You might structure it so that some of his bonus comes off of the cap this year, but you would only work it like that if you had the room already. Clearing space with Ike, and shoving Ike's money into next year, only so that you can put Manny's money into this year, is not necessary and doesn't help you out in the long run.

The Steelers do not do new deals during the season. They only restructure current deals converting salary to bonus.
